Rarotonga's - "Restaurant of the Year"
The stylish Polynesian beachfront restaurant and chic beach bar celebrates the essence of Polynesian architecture, design, décor and cuisine, that can be enjoyed in a fine dining a la carte setting in the main dining area, or as a more casual al fresco dining experience on the spacious patio overlooking the lagoon and glistening infinity swimming pool.
The menu will champion and showcase Polynesian influenced dishes with our own flair to finish it. Guests will encounter exciting taste combinations inspired by the many different cultures throughout the Pacific Region – embracing the use of locally grown, fresh, and where possible, organic ingredients.
Guests on the outside patio will also be able to enjoy a more extended / relaxed dining experience, with a menu offering light meals and snacks all day from 11am to 9pm. The sophisticated open bar features a lounge area with panoramic views of the beach as well as 180 degree views of Muri lagoon.
Nautilus Resort Rarotonga - Executive Chef
Craig Knudsen has spent over ten years working in renowned Australian restaurants from Margaret River to the Great Barrier Reef and became Qualia’s Executive Chef in late 2015.
Craig launched his wide-ranging career in his hometown of Canberra, moving onto Margaret River, Ayers Rock, and Broome. Craig’s career progressed to the acclaimed two-hatted Sydney restaurant Tetsuya’s where he refined his craft working alongside some of Australia’s most talented chefs. After working at Tetsuya’s, Craig joined Qualia where his passion for Australian cuisine was ignited. After a one year tenure at the Royal Mail Hotel – another award-winning destination – Craig returned to Qualia, shortly thereafter becoming Executive Chef. In this role he succeeded in creating a unique expression of Australian identity in his culinary creations, reflecting the resort’s quintessentially Australian surrounds.
Craig is now adding another chapter to his already remarkable career. Joining Nautilus Resort Rarotonga as Executive Chef he embarks on his very own South Pacific adventure. Craig is passionate about discovering new local ingredients, Polynesian flavours and Cook Island culture.
